step by step recipe
In crafting Chicken Biryani, start by marinating 500g of chicken pieces in a mixture of yogurt, ginger-garlic paste, chili powder, turmeric powder, ground coriander, and salt. Allow the chicken to marinate for at least an hour, or preferably longer for enhanced flavor. Meanwhile, soak 2 cups of basmati rice for 30 minutes, then cook it until it’s 70% done. In a separate pot, sauté thinly sliced onions until golden brown, then add chopped tomatoes and cook until softened. Add the marinated chicken, along with green chilies, and cook until partially done. Begin layering the biryani by spreading a portion of the cooked chicken at the bottom of a heavy-bottomed pot, followed by a layer of partially cooked rice. Sprinkle chopped fresh cilantro and mint leaves over the rice, then repeat the layers until all ingredients are used, ending with a layer of rice on top. Garnish with fried onions, sprinkle with garam masala, and drizzle saffron-infused milk over the rice. Cover the pot and cook over low heat for 20-25 minutes to allow the flavors to meld and the rice to cook through. Once done, gently fluff the biryani with a fork, mixing the layers together, and serve hot, garnished with additional fried onions, cilantro, and mint leaves. Accompany with raita and pickle for a complete culinary experience.
